Busy day Taco Soup

When I know I am going to have a busy day I almost always plan to 
lean on my best friend in the kitchen- my good old slow cooker. 
There are so many great recipes you can make in less than 15 minutes 
of prep time in the morning and then a mouthwatering, 
healthy dinner is waiting for you when you come in at dinner time. perfect right?!? 

It's like having a housekeeper that you don't have to pay. 
Ok, not really because it doesn't clean bathrooms or do laundry but still, 
it's better than nothing! 
Anyway, one of my families favorite slow cooker recipes is taco soup. 
We really love just about anything with black beans and 
some spice to it though so I just started throwing some stuff together one day 
and it was definitely a keeper so now I am sharing it with you!

 This recipe is super easy to modify to your own taste but I usually use 1 to 1 1/2 pounds ground turkey or lean ground beef. 
Brown the ground meat of choice with a diced up onion and then place in slow cooker with 
2 cans organic diced tomatoes, 
1 can drained corn, 
1 can drained and rinsed black beans, 
3 chopped green chilis (or one can), 
chopped green bell pepper and about  
1/2 cup chicken stock (or more depending on how thick of a soup you want) 
then season with cumin, 
onion powder, 
garlic powder 
red pepper flakes and 
chili powder to taste. 


Cook high 4 hours or low 6-8. 
YUM- believe me, your whole house will smell delicious as this cooks!
 
Feel free to add a dollup of plain greek yogurt and some chopped green onions or cilantro to the top for serving!

In my house this usually feeds two adults and two kids for dinner and then gives us about 4 or 5 servings of leftovers.

Easy. Healthy. Quick. - in my book that's the tri-fecta necessary for a go-to recipe!
